7,30 am Departure from Florence.
Arrival at 9,00 am to the Caseificio, where the whole Parmigiano Reggiano making process will be explained. Taste at least 3 different Parmigiano Reggiano.
After the caseificio, we will make our way to Modena, where we will visit the old and traditional food market.Inside the market you will have a Lambrusco wine tasting accompanied by traditional Modena-ham and more.
Throughout the 1970s and 1980s, sweet Lambrusco was the biggest selling import wine in the United States, reaching a high of over 13 million cases exported to the country in 1985.
The most highly rated of its wines are the frothy, frizzante (slightly sparkling) red wines that are designed to be drunk young.
Through the skill and diligence of generations of producers, Lambrusco has become one of the symbols of the province of Modena.
We will have lunch in a typical trattoria Modenese, enjoying an authentically cooked Italian meal of three courses with a fantastic Lambrusco wine.
After lunch, we will make a “passeggiata” ( leisurely walk) around the streets of Modena.
For those who love cars, there is an option to visit the “Enzo Ferrari Museum of Modena”.
Next, right after the visit of Modena, we will make our way to an Acetaia (Balsamic Vinager Factory) where you will have a private tour of the cellars, receiving a full explanation of the processing phases to make Balsamic Vinegar, from the pressing of the grapes, the wort boiling cooked inside the boiler, to the filtration and mixing.
The ageing step inside the wooden barrels of different types of wood and different sizes.
You will also have the opportunity to taste the balsamic vinegar “Tradizionale” and “Extravecchio”.
