Your guide meets you at your hotel to begin your day tour, starting by cycling around Hoi An toward Tra Que vegetable village, where about 150 farmers and 400 owners live and cultivate roughly 20 types of vegetables and herbs, including mint, lettuce, basil, cilantro, and broccoli on nearly 100 acres (40 hectares).
Eight tons of Tra Que vegetables are sold every year, and the growers do not use pesticides or GMOs, choosing instead natural fertilizers such as seaweed found in the river and harvested by gardeners every morning. You are invited to walk through the village, meeting local people working in the garden as they have done for centuries.
Continue your bike journey through the villages of Hoi An, crossing vast rice fields away from the tourist trails. Observe the activities of village inhabitants, and learn from farmers about cultivation methods and how to protect developing vegetables from insects; you can also join in gardening activities such as raking the ground, sowing, and watering, transplanting, and tending greens. Ride past Ba Le market until you reach Van Lang fishing village and the water coconut forest of Bay Mau. The 17-acre (7-hectare) mangrove forest features canals and houses covered in woven water coconut leaves; this haven once provided refuge to people and local soldiers during the Vietnam War, but the forest is now famous for its abundance of seafood.
Your next activity is to prepare lunch with a local family. Learn how to make tam huu spring rolls and banh xeo pancakes, which you can then enjoy along with other Vietnamese delicacies. After lunch, rest for a bit before returning to your hotel.

Overall very good half day, lovely guide and the local people we met were very welcoming. Lots of activities within the morning followed by a tasty lunch. Note that no helmets are provided with the bikes which may have been desired given the crazy roads in Hoi An!
