Pachamanca Gastronomy Tour in Huaraz

This special huge dish is prepared with three kinds of meet: chicken, lamb and beef and goes with potatoes, sweet potatoes, spice of bean called Habas in Spanish, Oca (like sweet potatoes but small ones), tamali and with special prepared sausages with aromatic herbs.

Start by heating lots of small stones, very hot almost coals. Then the meats have to be warped and well mixed with the hot-stones and all the rest has to be covered or buried in the earth at no smoke. Wait for it to cook and take it out when it's ready for lunch or dinner (depending on the option you chose).

The preparation of the Pachamanca dish takes place in different families houses in areas surrounding Huaraz. If the Pachamanca is reserved for lunch the family house will be 10 to 20 minutes driving distance outside of the city. If the Pachamanca is reserved for dinner the family house will be in the surrounding areas of Huaraz city.
