These old and slow recipes were destined to disappear because of our new fast society, that is why this restaurant has been trying to preserve them until today. The menu can slightly vary according to the seasons and the product's availability, that is a guarantee for always finding fresh products and ingredients.

You can choose between one of these options (please comunicate in advance your cooking skills to customize the experience):
• Fresh pasta (umbrichelli and picchi): making an egg pasta/typical water pasta dough with traditional rustic sauce. Wine-tasting.
• Dough: various techniques to make dough for bread, pizza and other bases. Wine-tasting.
• Cheeses: how to prepare cheese from the fresh sheep milk, followed by local products tasting paired with fine wine (not available during summertime).
