Nicole's Table - Cooking with Rum

About this activity
Nicole provides hands on instruction complemented by island life anecdotes and stories. Classes start at 11 AM Monday through Saturday. Nicole walks visitors through each recipe, discusses the spices used, and talks about the history of West Indian flavours in her own lighthearted way. Visitors are asked to come on time and most acquire transportation either via a taxi or rented car.
Typical Menu: A typical Cooking with Rum menu includes the following (depending upon the availability of certain ingredients):
• Cocktails: Nicole's Old Fashioned Rum Punch, a local juice, and water from our sky filled cisterns
• Appetizer: Sweet Potato Soup with Rum
• Main: Rum and Brown Sugar Marinated Flank Steak with Onion Jam, Plantains Wrapped in Bacon, Red Beans and Rice, and a Garden Salad
• Dessert: Bread Pudding with Rum Soaked Raisins and a Butter Rum Sauce
