Brian and Holly are Gilbert's Cheese Experience. We host cheese-pairing pop-ups that combine locally procured food and beverages with insider access to craft producers. This event pairs artisan cheese with amaro: a type of Italian liqueur. The name means "bitter," but amari are wonderfully versatile spirits, with flavor profiles ranging from savory to licorice to cherry-cola sweet. They're lovely to drink on their own, in a cocktail or paired with food — and we'll give you a taste of all three!
We're teaming up with Cedar & Spokes to bring you an international culinary event from the heart of Seattle's food culture: Pike Place Market. Mixologist Justin Thimmesch has selected four of his favorite amari and crafted a signature cocktail.
First, we'll talk about the importance of connecting to your local food and beverage ecosystem. We'll teach you how cheese is made, and lead you through a proper tasting. Then we'll cut you loose to eat and drink! This is a fun, interactive time where you can ask questions and exchange ideas with us, the producers and other guests. You'll leave satiated, satisfied and having learned a few things, too!
